Ludhiana, August 21, 2023: The Department of Food Science and Technology, Punjab Agricultural University (PAU), transferred the technology of pure rose extract and syrup to farmer-cum-entrepreneurs Mr Karamvir Singh and Dr Jaspreet Kaur from Doraha, Ludhiana. Dr Poonam A Sachdev, Principal Scientist, shared the technology and trained the couple for the preparation of extract from the rose petals and formation of rose sharbat (syrup) using pure rose extract.
Welcoming the entrepreneurs, Dr Savita Sharma, Head, Department Food Science and Technology, apprised them of value added products and showed them the facilities available at Food Industry Business Incubation Centre.
Dr Sachdev revealed that this is cold extraction technology for the preparation of rose extract, which retains the maximum natural red colour and flavour of the rose. Moreover the product contains high amount of anthocyanins, acting as a rich antioxidant and thereby offering a completely healthy and hygienic product in comparison to the synthetic rose syrups, which are nothing but high calorie and high sugared products without any nutritional profile.
Dr Satbir Singh Gosal, Vice-Chancellor, PAU and Dr Ajmer Singh Dhatt, Director of Research, appreciated the concerted efforts of Dr Sachdev in sharing this technology with the farmer community of Punjab.
