Ph.D Scholar at PAU gets Young Researcher Award
During the International Conference on “Agriculture, Food Technology and Nutrition,” held virtually
Ludhiana: Mr Rajan Sharma, UGC-Senior Research Fellow, Department of Food Science and Technology, Punjab Agricultural University (PAU), has bagged the prestigious “Best Young Researchers Forum Oral Presentation Award” during the International Conference on “Agriculture, Food Technology and Nutrition,” held virtually on June 7 and 8, 2021. Researchers and academicians from across the globe participated in the event. Mr Sharma presented his research work entitled “Influence of bioprocessing treatments on anti-nutritional factors, morphological characteristics, techno- and bio- functional properties of foxtail millet (Setaria italica)” executed under the supervision of Professor Savita Sharma, Principal Food Technologist (Dough Rheology), PAU. The investigation focused on potential of germination and fermentation techniques to enhance the functionality of foxtail millet due to modified structural and molecular interactions. This research group is currently exploring different techniques to valorize nutri-cereals for potential food applications.
