TRAINING ON PREPARATION OF VINEGAR FROM SUGARCANE JUICE

Ludhiana, March 5, 2018: Krishi Vigyan Kendra Fatehgarh Sahib conducted training programme on preparation of vinegar from Sugarcane Juice.

Dr.Harinder Singh Associate Director (Training) Krishi Vigyan Kendra gave details about the training programme and emphasized that such training programmes are organized as per the needs of the farmers and farm women. Vinegar is used in large households as it used in preparing pickles and by acquiring training on preparing vinegar trainees can take it up as subsidiary occupation. The training was organized in collaboration with Department of Microbiology, PAU Ludhiana.

Dr.Gurvinder Singh Kocher, Senior Microbiologists appraised the trainees about the importance of preparing vinegar from fruits emphasizing on the fact that there is need to revive the production and use of natural vinegar which has declined due to problems of long fermentation. To overcome this problem, the Department of Microbiology has developed domestic and commercial scale technologies for preparing fermented vinegar from sugarcane and grapes. He also demonstrated the technique of preparing sugarcane vinegar.

Dr.Manisha Bhatia Assistant Professor, KVK gave information on the benefits of natural vinegar over artificial vinegar including the medicinal benefits and its usage as antiseptic, anti-oxidative, anti rheumatic and cholesterol reducing agent.
